Red velvet cakes and cupcakes are very popular @ valentine because of it's distinct red color.
Follow this simple recipe to create sumptuous, moist red velvet cupcakes for your boo this valentine.
Flour 2 1/2 cups
Sugar 1 1/2 cups
Baking soda 1 teaspoon
Salt 1 teaspoon
Cocoa powder 1 teaspoon
Vegetable oil 1 1/2 cup
Buttermilk 1 cup
Eggs 2 large eggs
White distilled vinegar 1 teaspoon
Flavour 1 teaspoon vanilla
Food coloring 2 tablespoon red coloring
Method:
Measure out all the ingredients accurately.
Flour 2 1/2 cups |
Sugar 1 1/2 cups |
Baking soda 1 teaspoon |
Cocoa powder 1 teaspoon |
Vegetable oil 1 1/2 cups |
Buttermilk(substitue) 1 cup |
Place paper cups into the muffin pan.
In a medium mixing bowl, sift together - flour, sugar, baking soda, salt and cocoa powder.
In another mixing bowl, gentle beat together - oil, buttermilk, eggs, food coloring, vinegar and flavour.
Add the dry ingredients to the wet ingredients and mix until smooth and thoroughly combined, ensure you scrap down to ensure the batter completely incorporates the food coloring.
Using a pastry bag or a disposable icing bag and nozzle, fill the paper cup until about 2/3 full.
Bake for about 20 mins or until a toothpick inserted comes out clean.

ReplyDelete@ anonymous: to make homemade buttermilk - measure 1 tablespoon of vinegar into 1 measuring cup and add milk (liquid like peak or anyone of ur choice) to make up to 1 cup. Leave to rest for at least one hour and you will have a curdled looking mixture. that's ur buttermilk

ReplyDeleteHello dear, what I normally do when I want to make more than the recipe states is to get an eqivalent measurement for 1 of the major ingredients. In this case, I choose the flour. 21/2 cups of flour is eqivalent to 350g so if you want to use 1kg of flour scale the recipe by 3 (although this give flour of about 1.050kg). Hope this helps
