Plain Vanilla Spong Cake

Tried, tested and trusted vanilla sponge cake recipe

Ingredients:

Margarine/butter               500g
Sugar                                    500g
Flour                                     600g
Eggs                                     12 pieces
baking powder                    2 tablespoons
Vanilla essence                   1 tablespoon



Method:
Measure all ingredients accurately
Cream the margarine/butter and sugar together until it is fluffy















 Sieve the flour and the baking powder together.













Break the eggs into a bowl and add the vanilla essence.














 Scrap the creamed butter and sugar mixture into a bigger bolw, add the eggs and flour interchangeably until you have added everything.
Stir until all the ingredients are fully incorporated.















Spoon into @ prepared 10" by 2" pans and bake until done.

 Tips:
Always ensure your ingredients are at room temperature - if your eggs are in the refrigerator ensure you bring them out hours before you use them same applies to the butter or margarine. Baking sponge cakes in sandwich pans reduces the time it takes to bake the cake and also ensures your cakes are fluffy.
